Apple Cinnamon Protein "Zoats"
Say hello to my new favourite breakfast! I created this wholesome recipe based on trial and error, and I couldn't be happier with the taste and nutrients it provides. If you've read my most recent blog post, you know that I'm all about incorporating more protein and plant-based foods into my diet - when I started creating this recipe, I definitely had that in mind.
1/4 cup gluten free rolled oats
1/2 cup grated zucchini
1 scoop protein powder (I use Arbonne's vanilla protein mix or Kaizen Naturals vanilla protein powder)
1/2 cup unsweetened almond milk
1/4 cup water
1/4 cup free run egg whites
1 gala apple (sliced into small pieces)
1-2 tsp cinnamon
5-6 drops liquid stevia (if needed)
1 tbsp unsweetened shredded coconut
1 tbsp black chia seeds (I used the Prana brand; can buy at Save-On Foods)
While whisking regularly, heat oats, zucchini, protein powder, almond milk, water and egg whites in a saucepan until contents come to a boil, then reduce heat to low immediately. Add sliced gala apple, liquid stevia and cinnamon, and continue to mix regularly. Let simmer for 3-5 minutes.
Add to bowl, top with coconut, chia seeds, and more cinnamon if you'd like. This hearty breakfast has the perfect balance of protein, carbohydrates and fats, and contains vitamin A, vitamin C, calcium and iron. Enjoy!
*Tip - you can always add more water or almond milk to this recipe while cooking if you prefer a more watery consistency for your oats.
