Avocado Toast & Eggs
This is a suuuper simple "recipe" for avocado toast, but I thought I would share it for anyone out there looking for a quick, nutritious meal or snack. This is one of my favourite things to throw together, as it has such a great balance of carbohydrates, protein and healthy fat.
2 slices of Udi's whole grain gluten free bread (can buy at Save-On)
1 hard boiled free range egg
1/2 a ripe avocado
Pepper to taste
Toast bread. Mash avocado on a plate with a fork, then spread on top of toast. Slice hard boiled egg into 4 pieces, place two slices on each piece of toast. Season with pepper to taste (I sometimes like to add a drizzle of balsamic vinegar and some chili flakes). Enjoy!
