Banana Cinnamon "Zoats"


I've been trying to sneak more veggies into my diet, so when I came across a tasty recipe for banana cinnamon "zoats" (aka zucchini oats) on, I was thrilled! Oats are a staple for me when it comes to breakfast, so adding a little zucchini to them was an easy way to get in an extra serving of vegetables for the day. I've adapted the recipe to make it my own - it's one of my favourite breakfasts that I enjoy at least 2-3 times a week!

Place the following ingredients in a saucepan and simmer until most of the liquid is absorbed (approximately 4-5 minutes):

1/3 cup gluten free rolled oats
1/2 cup zucchini (grated)
1 tbsp ground flax
1/2 cup unsweetened almond milk
1/4 cup water

Add in the following ingredients, and let simmer for another few minutes, stirring frequently:

1/2 scoop protein powder (I used Kaizen Naturals vegan vanilla flavour)
1/2 mashed banana
1-2 tsp cinnamon

Placed cooked zoats in a bowl, top with 1/2 cup fresh berries of your choice, and enjoy! 

This delicious dish packs in lots of fibre, iron, Vitamin A, Vitamin C, and potassium. I like to enjoy it with a steaming hot cup of Traditional Medicinals dandelion root tea, which promotes bile production and aids in digestion (click the picture below for more info).
