Berry Coconut Smoothie Parfait
I created this plant powered snack on Earth Day :) I like to think of my diet as "plant strong" - I try to incorporate as many plants into my diet as I can, as it's better for our planet, and makes me feel energized and fresh.
For the purple layer, blend:
1/2 cup unsweetened almond milk
1 scoop vanilla protein powder
1/2 cup frozen strawberries
1/2 cup frozen blueberries
1 tbsp acai berry powder (optional)
The white layer is simply unsweetened coconut yogurt, and I topped everythingwith frozen berries. Enjoy!
