Blueberry Vanilla Chia Seed Pudding

This scrumptious dessert was adapted from Joy McCarthy's Raspberry Chia Seed Pudding recipe (www.joyoushealth.com), which can be found in her newly released book "Joyous Detox".  I added a twist to it by sprinkling some homemade granola (click picture at the bottom of the page for the recipe) and blueberries on top!

Ingredients:

1 can (4 oz/400 mL) full fat coconut milk
1/2 cup filtered water
1/3 cup chia seeds
2 tbsp real maple syrup
1/2 tsp vanilla powder or 1 tsp pure vanilla extract
1 tsp cinnamon
1/2 cup blueberries

Directions:

In a medium bowl, combine the above ingredients (except cinnamon and blueberries) and mix well. Cover and refrigerate for at least 4 hours. Top with homemade granola, blueberries, and a sprinkle of cinnamon. Enjoy!
