Chocolate Cherry Coconut Clusters
These Chocolate Cherry Coconut Clusters are SO YUMMY! They're also a great blend of healthy fats, protein, and carbohydrates to keep you energized and your blood sugar stable.
In a food processor, mix:
1 cup pitted cherries
1.5 cups raw cashews
1/2 cup unsweetened shredded coconut
2 scoops vanilla protein powder
3 tbsp hemp hearts
1 tbsp powdered stevia (or sweetener of choice, if desired)
1/4 cup dark chocolate (I used 99% cacao Lindt chocolate - this was equivalent to 12 pieces)
Pinch of Himalayan salt
Once everything is mixed well, use a tablespoon or small ice cream scoop to spoon mixture into an airtight container lined with parchment paper - be warned, the mixture is pretty sticky! Let set in the freezer for 2-3 hours. I find these store best in the freezer vs. the fridge, as they don't harden completely. Recipe makes 12-14 clusters. Enjoy these on their own as a healthy snack, or add to smoothie bowls, oatmeal, yogurt parfaits, etc.
