Chocolate Peanut Butter Blueberry Oats
This has been my breakfast of choice lately! It's so easy to make, and is filled with complex carbs, fibre, healthy fats, and protein, as well as micronutrients such as potassium, calcium, and vitamin A.
1/4-1/2 cup rolled oats
1/2-1 cup unsweetened almond milk (may add more, or some water, depending on desired oatmeal texture)
1/2 cup egg whites
1 scoop vanilla protein powder
1-2 tbsp natural peanut butter
1/2 cup blueberries
Liquid stevia (if desired)
2 tbsp raw cacao nibs
Simply heat all of the ingredients except the cacao nibs, peanut butter, and blueberries in a saucepan on medium heat, stirring with a whisk frequently as it comes to a low boil (don't overheat - the protein powder won't be happy). Reduce heat to low, and stir often for another 1-2 mins. Top with cacao nibs (these are full of fibre, iron, antioxidants, and magnesium), blueberries, peanut butter, and some more cinnamon. Enjoy!
