Cinnamon Apple Protein Pancake
My house smelled like freshly baked apple pie when I made this mouth-watering breakfast - an added bonus to the fact that this bad boy is packed with protein and healthy fats. The perfect breakfast to make on those slow weekend mornings :)
Ingredients (yields 1 large pancake or 2 small ones):
2 large free run eggs
1 medium ripe banana
1/2 scoop vanilla protein powder
Cook pancake on medium heat (consistency will be more like a crepe, but once cooked I still enjoyed it as a pancake). Top with apples sautéed in coconut oil and cinnamon + unsweetened shredded coconut. Enjoy!
