Vegan Cauliflower Alfredo Sauce
I got this simple, delicious recipe from Detoxinista (www.detoxinista.com), and thought I would share it for those looking for a vegan, gluten-free option! Being dairy-free, I never thought I'd be able to have anything like Alfredo sauce ever again, but once I tried this quick and easy recipe I was pleasantly surprised! I was also really happy that this recipe called for cauliflower, as it's a vegetable I rarely eat, and is packed with Vitamin C, B vitamins, and Vitamin K.
Ingredients (makes 2 cups):
1 teaspoon coconut oil (or butter, if you'd like)
2 cloves of garlic, minced (I used 2 tbsp garlic paste)
12 oz cauliflower florets (roughly 1 small head of cauliflower)
1 cup water
1/2 tsp fine Himalayan salt (can add more to taste if desired)
Black pepper to taste
Heat coconut oil and garlic in a medium sized saucepan on low heat for 2-3 minutes. Add water and cauliflower, and increase heat to bring water to a boil. Reduce heat to a simmer once water is boiling, then cover saucepan with lid for 8-10 minutes. Ensure cauliflower is tender and soft before removing from heat.
Carefully pour contents of saucepan into blender (I used my Vitamix, but any decent blender should work - I've even managed to make this recipe using a Magic Bullet before). Blend on high until smooth. Use caution when taking blender lid off, as hot ingredients can cause the lid to pop off forcefully. Pour mixture into a bowl, add salt and pepper as desired. Enjoy with whatever dish you'd like - I recommend gluten free pasta or zoodles (zucchini noodles).
