Easy Baked Salmon and Veggies
One day, when I was stuck on what to make for dinner, I found this quick and easy salmon recipe online, and roasted some veggies on the side for a simple, nutritious, nourishing meal!
For the salmon (I used 4 small fillets):
Preheat oven to 325 F. Mix 1/4 cup low sodium soy sauce (or coconut aminos for a less salty taste), 1 tsp lemon juice, 1/2 tsp ginger, 1/4 tsp cinnamon and 1/8 tsp black pepper. Place salmon fillets in a shallow baking dish, and pour liquid over them. Cook for 25 mins, or until salmon is flaky. Garnished with a lemon slice and some parsley flakes.
For the veggies:
Place chopped zucchini and bell pepper on a tray lined with parchment paper. Drizzle with extra virgin olive oil, Himalayan salt, and black pepper. Cooked for 15 mins at 350 F. Enjoy!
