Freckled Smoothie Bowl

I call this my "Freckled Smoothie Bowl" because of the tiny flakes of kale in it that give it that appearance. This is one of my favourite smoothie bowls to have in the winter - it's full of nutrients; most notably, Vitamin C, which is key in helping to maintain a healthy immune system and fight off colds.

Smoothie base:

1/2 fresh banana
1 cup frozen mango
1/2 cup frozen strawberries
Handful of frozen kale (can also use fresh)
1/2 to 3/4 cup unsweetened almond milk (depending on the consistency you prefer)
1 scoop protein powder (I used Arbonne's vegan vanilla protein mix)

Toppings:

1/2 fresh banana
1 small mandarin orange
Unsweetened shredded coconut
Homemade granola (click here for link)

Directions:

Blend all smoothie base ingredients together in a blender (I used my Vitamix, but any decent blender should work). You might need to give the mixture a few stirs in between blends, and add more almond milk depending on the consistency you prefer. Once mixture is smooth, pour into a bowl and add toppings as desired. Enjoy!
