(Gluten Free, Dairy Free - Vegan Option)
Homemade granola! I could eat this shiz by the spoonful. It's adapted from a recipe by Gluten Free Goddess - it's also dairy and refined sugar free, and can be made vegan by switching out the honey!
4 cups gluten free rolled oats
1/2 cup chopped almonds
1/2 cup chopped cashews
1 cup unsweetened shredded coconut
1/2 cup honey (or maple syrup if vegan)
6 tbsp light olive oil
1/2 tsp ground cinnamon
1 cup raisins
*Note: I used a magic bullet to pulse the almonds and cashews until coarsely ground.
Preheat over to 325 F. Take out two baking sheets and cover with parchment paper. In a large bowl combine the dry ingredients (oats, coconut, raisins, almonds and cashews). In another bowl, combine the honey, olive oil and cinnamon and mix well with a whisk. Drizzle this mixture over the dry ingredients and stir until fully coated. Spread granola mixture evenly between the two baking sheets. Bake on middle rack for 15 minutes, stir mixture around, and then bake for another 8-10 minutes, until golden brown and crunchy. Enjoy!
