Kale Chips

I remember the first time someone told me about kale chips. My first question was: "...what's kale?" Fast forward several years later, and it's one of my favourite vegetables. It has so many health benefits (most notably, it is high in protein, calcium, potassium, Vitamin K and Vitamin C), so I try to incorporate it into smoothies, stir fry, muffins, you name it! Sometimes, however, I just want something quick and easy, which is when I turn to this simple recipe for kale chips.

Ingredients:

4-5 bunches of kale
2 tbsp extra virgin olive oil
Salt and pepper to taste
1 tsp balsamic vinegar

Directions:

Preheat oven to 350 F. Separate kale from stems, tearing into small pieces. Wash thoroughly and pat dry. In a baking sheet lined with parchment paper, lay out kale evenly. Drizzle olive oil and balsamic vinegar over kale leaves, and use hands to ensure each piece is coated. Season with salt and pepper to taste. 

Bake for 10-12 minutes in oven. I recommend peeking in around 8 minutes to ensure the kale isn't too crispy, as some ovens are more powerful than others. When desired crispiness has been achieved, let cool for 5 minutes. Enjoy as a side dish or a tasty snack!
