Mint Chocolate Chip Smoothie

Hanging onto summer as tightly as I'm hanging onto this creamy, delicious mint chocolate chip smoothie 😍 💚

1 cup unsweetened coconut milk
1/2-1 cup water (depends what consistency smoothie you prefer)
1.5 scoops chocolate protein powder (I use the Genuine Health vegan brand)
1 cup frozen cauliflower (if you like your smoothies a little sweeter, can use 1 frozen banana instead)
1 tbsp coconut butter
2 tbsp raw cacao nibs
Handful of spinach
1/4 cup fresh mint leaves

Optional smoothie additions: 
1 serving collagen
1 tsp ashwaganda powder
1 tsp maca powder

Topped with some more fresh mint leaves and the juiciest fresh figs (there was more than one, but they all sunk to the bottom 😭). Enjoy!
