Strawberry Chia Seed Pudding
You can't go wrong with this tasty treat - it's full of healthy fats, antioxidants, protein, iron, magnesium, manganese, calcium, and phosphorus! I try to consume chia seeds everyday because they have such amazing nutritional value. You can enjoy this pudding for breakfast or as a snack - it's nutrient dense, so it will keep you full for a while!
2 cups unsweetened coconut milk
1/2 cup frozen strawberries
Few drops liquid sweetener of choice (i.e. stevia, maple syrup)
In a bowl, whisk 4 tbsp of whole black chia seeds into strawberry coconut milk mixture, until no clumps of chia seeds remain. Chill in fridge for 1-2 hours, until set. Enjoy!
