Strawberry Yogurt Bowl
This is another easy snack that I love making several times a week! I thought I would share the "recipe" for those of you looking for a healthier alternative to the flavoured yogurts that you buy at the grocery store (i.e. that are full of refined sugar, and often other additives). I personally use plain lactose free yogurt from Superstore, as I like the taste and it doesn't bother me in any way, even though it still contains some dairy. Use whichever yogurt works for you (i.e. Greek yogurt, coconut yogurt), but try to find one that doesn't have any added sugar.
1 cup plain lactose free yogurt (or yogurt of choice)
1/2 cup frozen strawberries
1/2 scoop protein powder (I used Kaizen Naturals' vanilla flavoured one)*
1 tbsp cacao nibs
1 tbsp unsweetened shredded coconut
Mix protein powder and yogurt together in a bowl. Microwave frozen strawberries for 45-60 seconds, until they are slightly melted and resemble a compote texture. Add strawberries to the yogurt and protein powder mixture, and top with cacao nibs and coconut. Enjoy!
*You can omit the protein powder if that's not your cup of tea - if you choose to do so, you can sweeten the yogurt using 4-5 drops of liquid stevia (it has a somewhat tart taste without the vanilla protein powder added).
